Fancy something super healthy and filling for dinner? These roast mushrooms and sweet potato fries are delicious and provide a decent portion of healthy carbs. If you’re a cheese fiend then feel free to add some grated cheddar or feta on the mushrooms for extra deliciousness! Top tip: Make sure you cut the sweet potato into thin fries otherwise they won’t be cooked at the same time as the mushrooms.
Ingredients (serves 2):
4 portobello mushrooms
2 cloves garlic, crushed
1 sweet potato cut into skinny fries and coated in some olive oil, salt, pepper & 1/2 teaspoon paprika
Olive oil, salt & pepper
Parsley to garnish & green salad to serve
