One thing I love to eat in the colder months is a stew. You can either have it on it's own or I also like to have it with a roasted sweet potato.

Start off putting the stewing beef into a frying pan with a chopped onion and garlic and fry until sealed (about 10-15 mins). Cover lightly in plain flour
and add salt and pepper and herbs. Stir and keep frying until everything is coated in flour.
Put into a casserole dish and pour in boiling water and about half a bottle of red wine. Put in 2 crumbled oxo cubes, your chopped root vegetables
and some more garlic and herbs. Stir up, pop the lid on the casserole dish and place on a low heat in the oven.
Cook it for 3-4 hours ideally stirring every hour. You can tell it is ready when the majority of the liquid has soaked into the food.
