Foodie Friday: Vegan fudge brownies.

Ingredients :

1 tablespoon chia seeds

250g buckwheat flour

1 teaspoon bicarbonate of soda

60g cacao powder

330g coconut sugar

100ml almond milk

130g coconut oil, melted

Handful of walnuts, chopped

Method :

Step 1. Preheat oven 170 degrees.

Step 2. Place chia seeds in a bowl with 4 tbsp on water and leave for 10 minutes.

Step 3. Place flour ,bicarbonate , cacao powder and coconut sugar into a mixing bowl and mix well until lumps are gone. Then add almond milk , chia seeds and melted coconut oil and mix well for 5-5 minutes until well combined.

Step 4. Pour mixture into the lined tin and sprinkle with walnuts. Bake for 25 minutes or until cooked through. Leave to cook in tin for 10 minutes then transfer to a wire rack.
