Foodie Friday: Tomato and Potato Frittata Muffins

Ingredients:

 

Handful of baby potatoes 

5 eggs 

Handful of cherry tomatoes 

1/2 chopped onion 

50g frozen peas

2 spring onions, chopped 

 

 

Method:

 

Step 1. Preheat oven to 200 degrees and grease a muffin tray. 

Step 2. Wash and chop potatoes then bring to a boil over medium heat and cook for 10-15 minutes. 

Step 3. Whisk the eggs together in a bowl. 

Step 4. Next, slowly add in the potatoes, chopped onion, tomatoes, spring onion and peas. 

Step 5. Next, pour into the baking tray and bake for 20-25 mins.

Step 6. Once cooked, leave on a wire rack to cool down before serving.
