Foodie Friday: Tomato and basil pasta

Fresh tomatoes are plentiful at the moment. Buy them from a local farmers market to get the best tasting fruit or even try your hand at growing your own. Fresh locally grown tommies will be the perfect 'cherry on top' to set off this yummy Tomato and Basil Pasta recipe:

Ingredients:

1 can of tomatoes

Tomato purée

1/2 onion

1 packet of tomatoes 

1/2 jar tomato and basil pasta sauce

1 clove of garlic

Handful of fresh basil

Wholemeal Spaghetti 

 

Method

Step 1. Fry onion and garlic over a medium heat in a pan with olive oil. Cook until succulent.

Step 2. Next, add chopped tomatoes and canned tomatoes. Cook for a few minutes. 

Step 3. Then add pasta sauce and purée. Turn down to simmer for 10 mins. 

Step 4. Cook pasta per packet instructions.
