Foodie Friday: Sweet Potato Salad.

    Very easy to make and great for lunch or served as a side salad with grilled meat. Not only are sweet potatoes super delicious but they are high in beta carotene, vitamins E and C, iron, potassium and vitamin B6.  Recipe ( serves 2) :  2 medium sweet potato(Peel and cut sweet potato into big chunks) 1 Tbsp olive oil  4 cups of spinach Half a red onion chopped Half a block of feta cut into small cubes 1 cup of cherry tomatoes halved Handful of pine nuts Balsamic Vingar Method:  -Heat oven to 180 degrees and toss chunks onto a lined baking tray drizzle with olive oil and a pinch of salt and pepper. Bake for 30-35 minutes. Once golden remove from oven and let them cool to room temperature.  -Then whisk all ingredients together and season again also dressing with balasmic vinegar.
