Foodie Friday: Sweet Potato Frittata

Ingredients:

 

6 eggs

1 courgette

1 sweet potato

1/2 broccoli 

1 cup of milk of your choice.

 

Method:

 

Step 1. Peel and chop sweet potato then wash and chop courgettes and broccoli. 

Step 2. Next, add veggies to the steamer and steam for 15 minutes or until soft. 

Step 3. In a bowl, whisk the eggs together. 

Step 4. In a pan, over medium heat, add the veggies and whisked eggs and cook until the eggs are done.

Step 5. Add to the oven for 10 minutes to ensure the frittata is cooked through.
