Set the oven at 200, coat fries in olive oil, salt and pepper and impatiently wait 30min until soft. Feel free to smother with cheese, like I did seconds after this photo was taken! Did you know that sweet potatoes may be one of nature's unsurpassed sources of beta-carotene. Several recent studies have shown the superior ability of sweet potatoes to raise our blood levels of vitamin A.
