Foodie Friday: Sweet potato cakes.

Ingredients:

4 sweet potatoes

2 tbsp tomato puree

1 tsp cumin

1 glove garlic

1 tbsp tahini

1 tsp chilli flakes

2 tbsp buckwheat flour

Method:

Step 1. Pre heat oven to 200 degrees.

Step 2. Peel sweet potatoes and cut equally into small pieces. Boila pan of water over med heat and add potatoes and c3ok for 15 mins.

Step 2. Place potatoes in a bowl and mash until smooth. Then stir in tomato puree, crushed garlic, cumin, chilli flakes , flour and tahini.

Step 4. Mound the mixture into four even sized cakes.

Step 5. Dust each cake with a little flour then place pn a baking tray and cook for about 20 minutes.

Serve with a simple salad.
