Foodie Friday: Salmon and potato salad

Ingredients: 

2 salmon fillets

1 potato

1/2 red onion

Handful of cherry tomatoes

1/2 block of feta

1/2 bag of washed lettuce

 

Method:

Step 1. Over a medium heat, in a pan cook salmon for 10 minutes or until fully cooked. 

Step 2. Peel potato and cut into cubes, add to the pan and cook until soft. 

Step 3. Wash tomatoes and then chop, along with onion, feta and red onion.

Step 4. Once salmon and potatoes are cooked, add all ingredients to a bowl and mix. 

Step 5. Dress with olive oil and salt, pepper.
