Foodie Friday: Roasted Veggie Wholemeal Pitta

Ingredients:

1/2 block of feta

1 red pepper

1 courgette

1 aubergine

1/2 red onion, chopped

1 wholemeal pitta

 

Method:

Step 1. Pre heat oven to 200 degrees.

Step 2. Wash and chop all veggies.

Step 3.  On a lined baking tray, place all veggies and drizzle in olive oil.

Step 4. Roast veggies for 15 mins then add the chopped feta on top and roast for a further 5 mins.

Step 5. Toast your pitta.

Step 6. Add veggies into your pitta.
