Foodie Friday - Roasted Vegetables
This is a great side dish on Christmas Day or nice for lunch.

 
Ingredients:
1 red pepper
1 Eggplant
1 medium size sweet potato
1 small red onion
1 green zucchini
1 yellow zucchini


Method:


1.Pre heat oven to 180 degrees.
2.Then peel the sweet potato.
3.Wash all other veggies and chop into cubes. ( deseed the pepper).
4 Place baking paper on a baking tray and pour on veggies.
5.Drizzle the veggies in oil and a sprinkle of salt.
6. Place in oven and bake for 30 mins or until golden brown.
