Foodie Friday- Roast Vegetable Salad

  This salad is an easy to way to get your 5 in a day in one meal :) Super delicious and great for lunch or a side dish with grilled meat or fish. Ingredients: Handful of spinach 1/2 a red onion 1 sweet potato (peeled) 1/2 aubergine 1/2 courgette Handful of cherry tomatoes 2 peppers 1/3 of a block of Feta Handful of pomegranates. Olive oil. Method:? Step 1- Pre-heat oven to 200 degrees. Then peel the sweet potato and cut into cubes. Step 2- Roast sweet potato for 8 minutes. Step 3- Chop all veggies anyway you like and put on a baking tray with salt and olive oil. Step 4- Roast all veggies and feta for 10 minutes. Step 5- Add spinach on a plate and layer veggies topping with feta. Enjoy!!
