Foodie Friday: Roast aubergine salad

Foodie Friday: Roast aubergine and semi-dried tomato salad. This is a super quick and easy lunch or dinner recipe the is both light and warming. Serves 2.

Ingredients:

1 large aubergine, cut into 1 inch thick rounds

1/2 pot semi-dried tomatoes. In some shops they are called ‘Sunblush’ and are like sun-dried, but not quite as dry!

1 bag Spinach/green leaves

1/2 teaspoon dried chilli flakes,

1/2 teaspoon salt

6 tablespoons olive oil

For the dressing, mix together well:

1/2 clove garlic, crushed

Juice of 1/2 lemon and 3 times as much olive oil

Salt & pepper

Method:

  • Heat oven to 200. Mix together olive oil, salt & chilli in a small bowl. Dip aubergine rounds into the mixture, coating both sides.
  • Roast aubergine for 25-30minutes until soft, turning once.
  • Chop tomatoes into small pieces.
  • Serve on a bed of green leaves with the tomatoes and drizzle the dressing on top
