Foodie Friday: Rainbow salad.

Ingredients:

2 peppers

1 avocado

1x kidney beans can

1 x can of corn

3 big tomatoes 

1/2 red onion

1 Garlic clove minced 

Salt

Oil

Lemon juice 

Method:

Step 1. For the dressing mix olive oil, garlic, lemon juice salt. 

Step 2. Over med heat cook drained kidney beans for 5 minutes. 

Step 3. Wash and chop peppers, tomato.

Step 4. Peel avocado and onion then chop. 

Step 5. Add all ingredients into a bowl and serve with dressing.
