Peanut butter Energy balls are the perfect snack to get you going when you need a pick me up. Keep in the fridge for up to a week or freeze if you want them to last longer.
Ingredients - makes 20 400g medjool dates ( pitted)
100g oats
100g of roasted peanuts
2 tbsp of coconut oil
2 tbsp of peanut butter
Method 1. Place the nuts and oats in a food processor and blend until they form a chunky flour then add the rest of ingredients and blend until you have a sticky mixture. 2. Roll into balls( around 20). Put in fridge for 20 minutes or eat straight away.
