Foodie Friday: Naked Burrito with Cauliflower Rice

Ingredients:

Cooked rice 

1 courgette 

1 aubergine

2 peppers

1 onion

Taco seasoning 

 

Method:

Step 1. Wash and chop all veggies and add to a pan over medium heat.

Step 2. Cook for 10 minutes, turning regularly.

Step 3. Add seasoning and cook for a further 5 minutes (until veggies are soft).

Step 4. Cook rice and combine with veggies.
