Foodie Friday: Mini carrot and courgette muffins.

Ingredients:

1 peeled carrot

1 courgette

1 egg lightly beaten

225g Plain flour

55ml Oil

175ml Oat milk

125g grated cheese


Method:

Step 1. Pre heat oven to 180 degrees.

Step 2. Grate the carrot and courgette then rinse the water in a tea towel. 

Step 3. In a bowl mix together flour and grated cheese, then add grated veggies and mix together.

Step 4. Mix together wet ingredients until well combined then add to the dry ingredients and give everything a good mix.

Step 5. In a lined muffin tray pour mixture evenly across 12 muffins. Bake for 25 minutes until golden brown.
