Ingredients:
2 cups of quinoa ( cook per instructions)
1 pepper
1 avocado
1/4 brown onion chopped
1 courgette
1/2 block of feta
A handful of cherry tomatoes.
Method:
Wash all veggies before use.
Step 1. Over med heat pan fry chopped pepper and courgette until cooked through.
Step 2. Next chop onion, cherry tomatoes , avocado and feta.
Step 3. Cook quinoa per packet instructions.
Step 4. Toss all ingredients together and enjoy!
