1/2 bag of kale
1 peeled sweet potato
Handful of pine nuts
Step 1. Preheat the oven to 200 degrees. On a lined baking tray, add chopped sweet potato and pepper and roast for 20 mins.
Step 2. Chop tomato, cucumber and onion.
Step 3. Wash and drain kale.
Step 4. Toss all ingredients together in a large bowl and dress with olive oil, salt and pepper.
