Foodie Friday: Healthy fish and chips

Today is National Fish and Chips Day and who doesn't love a salty hot chip but wonder if it's worth that 'heavy slump on a couch unable to move' feeling after? I sure do! Don't deny yourself, life's too short; you can still get your 'chip shop hit' with our delicious healthy fish and chip recipe. All the chip shop taste but none of that heaviness!

 

Ingredients:

1 sweet potato

2 haddock fillets

1 egg

Flour

Bread crumbs

Olive oil

Method:


Step 1. Preheat the oven to 200 degrees. 

Step 2. Peel and cut sweet potato into chips and place on a baking tray and roast for 20 minutes.

Step 3. On 3 plates place flour, whisked egg and bread crumbs.

Step 4. Pat dry fish and start with the dipping process starting with flour then egg and bread crumbs.

Step 5. Place fish in the fridge for 10 minutes.

Step 6. Then cook over a medium heat.
