Foodie Friday: Gingerbread

Ingredients:

225g spelt flour

200g coconut sugar

100g ground almonds

1 tsp bicarbonate of soda

1 tsp baking powder

150g raisins

300ml oat milk

3 tbsp coconut oil ( melted)

1 tsp cinnamon

1 tsp nutmeg

3 tsp ground ginger

Method:

Step 1. Preheat 180 degrees. Line a loaf tin with baking paper.

Step 2. In a large bowl mix together all dry ingredients mixing well so there are no lumps.

Step 3. Pour in the melted coconut oil and milk, whisk together well.

Step 4. Stir in the raisins.

Step 5. Pour the mixture into the loaf tin and bake for 50-55 minutes.
