Handful of spinach
100g button mushrooms
500ml oat milk
50g gram flour
3 tbsp police oil
1 tsp mustard
Step 1. Preheat oven 200g fan setting.
Step 2. Cut the cauliflower and mushrooms into a baking tray and drizzle olive oil and salt. Cook 20-25 minutes.
Step 3. Cook the pasta as pre packet instructions.
Step 4. Place a pan over low heat and drizzle olive oil, once warm add flour and begin to stir.
Step 5. Remove from heat and add a splash of oat milk and mix through.
Step 6. Continue adding a little oat milk at a time until all of the milk is incorporated and the sauce is smooth.
Step 7. Place back onto the heat and add mustard and cook for a further 10 minutes.
Step 8. Once veggies are cooked through, pour creamy sauce with pasta in a baking tray and bake for a further 10 minutes until crispy.
