1 brown onion chopped
1 garlic clove crushed
1 aubergine washed and chopped into cubes
Handful of cherry tomatoes
1 oat cream
1 cup fo frozen peas
Parmesan cheese to serve.
1 and 1/2 cup of mushrooms
Step 1. Cook pasta per packet instructions.
Step 2. Chop onion and crush garlic then add to a pan over med heat and cook until soft.
Step 3. Wash and slice mushrooms then add to pan , cook a further 5 minutes then add aubergine.
Step 4. Pour in cream and mix through covering the veggies then add peas and tomatoes and cook for 10 minutes.
Ready to serve.
