Foodie Friday: Courgette, tomato and parmesan gratin. A simple accompaniment to a fish or meat roast.
2 courgettes, sliced
4 ripe tomatoes, sliced
2 cloves garlic, chopped
50g parmesan, grated
- Heat oven to 180. Slice courgettes and fry over a medium heat with the garlic for approx. 5 minutes. Pour off excess liquid
- Place layer of courgette in an oven-proof dish. Layer sliced tomato on top. Repeat with another layer of courgette and tomato.
- Sprinkle cheese on top and place in oven for 20-30 minutes and serve with fresh thyme.
