Ingredients:
2 cod fillets
2 handfuls of mixed tomatoes, washed.
Lemon juice
Olive oil
Method:
Step 1. Pre heat oven to 180 degrees.
Step 2. In an oven proof dish drizzle olive oil.
Step 3. Roughly chop tomatoes and dress with salt, pepper , lemon juice and olive oil. Scatter in oven dish.
Step 4. Next add on the cod and bake for 15 minutes, until the fish flakes away.
