Foodie Friday: Christmas roast veggies 

Ingredients

2 x sweet potatoes 

2 large baking potato

1 courgette

Handful of broccoli and cauliflower 

1 red onion

1 tsp cinnamon 

1 tsp of turmeric

 

Method

Step 1. Preheat the oven to 200 degrees. 

Step 2. Peel potato and sweet potato and cut into chunks.

Step 3. Wash courgette and chop. Wash broccoli and cauliflower and cut into smaller pieces.

Step 4. In a baking dish, scatter the veggies along with spices and olive oil.

Step 5. Bake for 50 mins, until golden brown.
