Foodie Friday: Blueberry and Banana muffins.

Ingredients:

3 ripe bananas

150g frozen blueberries

1 tsp bicarbonate soda

1 tsp baking powder

3 tbsp coconut oil melted

75g coconut sugar

200g plain flour

3 tsp maple syrup

3 tbsp oat milk

Method:
Step 1. Preheat the oven to 180 degrees.

Step 2. Mash 3 bananas in a bowl until smooth then add milk, syrup, oil and remove any lump whilst mixing together.

Step 3. Next add the flour, sugar, bicarb, baking powder and whisk really well together, until smooth.

Step 4. Mix through frozen berries.

Step 5. Line a muffin tray with cases then pour in the mixture and cook for 25 mins.
