Foodie Friday: Baked banana and blueberry oatmeal.


50g oats

Handful of blueberries

50g walnuts

2 ripe bananas

30g sunflower seeds

70g raisins

5 tablespoons almond milk

2 teaspoons cinnamon

2 tablespoons maple syrup


Step 1. Pre-heat oven to 180 degrees.

Step 2. Place oats in a bowl and cover with boiling water. Leave for 10 minutes.

Step 3. Mash one banana and slice the other.

Step 4. Chop the walnuts into bite size pieces.

Step 5. Once the oats have absorbed the water stir in the rest of the ingredients, except the sliced banana.

Step 6. Pour mixture into a baking tray and add sliced banana on top. Bake for 20 minutes.

Serve with yoghurt.
