Foodie Friday – Apple and courgette muffins

Ingredients:

1 large courgette grated 

3 apples

Handful of dates 

1 cup of buckwheat flour 

2 cups of ground almonds 

1/4 cup Almond milk 

1 tbsp coconut oil

1/2 maple syrup 

1 tbsp of cinnamon

Toppings:

1/2 oats

1/2 pecan nuts 

1/4 almonds

1/4 dates

1 tbsp coconut oil 

Method:

Step 1. Pre heat oven to 200 degrees.

Step 2. Next peel 2 apples and discard their cores then cut into small pieces.

Step 3. Then wash and grate the courgette. Also give a good squeeze to get rid of the excess water.

Step 4.Place almonds into a food processor and blend for a min, then add all other ingredients and blitz until a mixture is formed. 

Step 5. Peel and chop the third apple and mix into the mixture. Spoon it evenly into the muffin tin and bake for 10 mins.

Step 6. While the muffins cook make the oats toppings. Place all ingredients into a food processor until a sticky paste is formed.

Step 7. Remove muffins from the oven and cover the tops with the sticky mixture. Bake for another 20 minutes or until muffins are cooked.
