Foodie Friday: Dreaming of a holiday in the Mediterranean? These flavours will take you there in an instant: Stuffed peppers with anchovies, tomatoes and basil. If you’re not an anchovy fan you can leave them off (or add extra to the filling if you love them!). Delicious hot or cold. Ingredients: 2 red peppers, top cut off and deseeded 2 large tomatoes, chopped 2 cloves garlic, crushed 75g bulgar wheat (or grain of your choice) A handful of basil leaves chopped, save a few for decoration 4 anchovy fillets 4 tablespoons olive oil, salt and pepper Method: - Cook bulgar wheat for 5 min less than packet instructs (it will continue cooking in the oven) - When cooked, mix bulgar wheat, tomatoes and their juice, garlic, basil, olive oil and optional extra anchovy together in a bowl.
