Foodie Friday: A simple, summer salad of prawns, courgette, feta and mint with a lime and chilli dressing. Perfect for those days when you want something light and refreshing  but packed with flavour. Serves 2 as a light lunch or 4 as a starter.

Top tip: Use a vegetable peeler to make ribbons out of the courgette and cucumber. Don’t use the middle of the cucumber as it’s full of seeds but if you don’t want to waste it you can chop it into chunks and pop in the freezer to make cucumber ice-cubes.

Ingredients:

2 courgettes (made into ribbons)

1/2 cucumber (made into ribbons)

1 pack pre-cooked prawns

1/2 block feta, crumbled

1/2 bunch mint, chopped

Optional: I used 1/2 cabbage, finely chopped to bulk the salad out.

Dressing:

1 red chilli, de-seeded and finely chopped

Juice of 1 lime

4 tablespoons olive oil

Salt and pepper to taste

Method: Place all dressing ingredients in a  jar and give it a good shake. Meanwhile mix together the prawns and the vegetables. Pour the dressing over and leave to stand for 10 minutes. The lime juice will soften the courgettes and the cabbage. After 10 minutes mix in the feta and the mint. Voila!
