Five kale recipes to try

Let's talk about Kale! It's the king of all super healthy greens and is definitely one of the healthiest and most nutritious plant foods out there. Although there are many types of kale, the most common is called curly kale which has green and curly leaves. Kale has many benefits and is low in calories which is also what makes it so popular. Kale contains little fat but a large portion of this fat is an omega-3 fatty acid called alpha linoleum acid. Including kale regularly in your diet is a great way to increase the total nutrient content of your diet.

 

Kale and cheddar soup - Kale, chicken broth, potatoes and tasty cheddar is all it takes to create a creamy well-rounded bowl of soup. Its not only the colour of emerald but the taste will blow your mind and it’s nice to try different things.

 

Kale hummus - Now who doesn’t love hummus? I could eat it all day! Kale hummus sounds strange but it’s oh so delicious. Enjoy with toasted pitta or in a slaw with beans and grilled veg. It’s also perfect to serve on a picnic or at a dinner party. 

 

Kale and garlic frittatas - Frittatas are a great weeknight dinner option when you only have eggs hanging around in the refrigerator. You can add anything in frittatas as the options are limitless. Kale is also a great combination with feta and sweet potato.

 

Kale quinoa stuffed sweet potatoes - This dish is a healthy spin on a jacket potato. Kale and quinoa filling is quick to make whilst the potatoes are roasting in the oven. You can also top it with yoghurt to give it that extra burst of flavour. The perfect summer dish. 

 

Kale tacos - These veggie-filled tacos make for best weeknight dinner as they are quick and very versatile. Just have kale as your base and build up from there with grilled veggies like red pepper, aubergine and courgette. YUM
