Blog: Left over Christmas recipes

Not sure what to do with all your Christmas leftovers? We thought we would share five healthy recipes so you can keep on enjoying all those delicious ingredients.

Bubble and squeak

The perfect way to use you leftover veggies is bubble and squeak. There are so many recipes you can use to have a delicious Boxing Day meal. Our favourite recipe is to make all your veggies into fritters. Take your mashed potatoes , parsnips, carrots , flour and 1 beaten egg. Mix all together then make into small patties to fry in a pan for a few minutes each side. Enjoy!

Cranberry chicken salad

A delicious salad to have lunch to use up any leftover cranberry sauce and roast chicken. These mouth watering flavours go so well together and you can still have that christmasy feeling on Boxing Day. Toss together with a chopped red onion and some mixed greens and there you have it.

Warm cauliflower salad

Cauliflower is often overlooked, but try it roasted in this winter salad for a plateful of crunchy goodness. Cut up cauliflower and roast for 25 mins at 180 degrees. Toss together half a chopped red onion, spinach and 50g of raisins and coat with olive oil.

Moroccan roasted vegetable soup

Roasted roots are perfect for making soup and its so easy. Use parsnips, butternut squash and carrots and add 1 tbsp of ras el hanout for Moroccan spice. Blend all veggies together adding 1 chopped onion and vegetable stock. Serve with some greek yoghurt.

Turkey Curry

Go classic with your turkey leftovers and whip up this healthy spice-filled stew with peppers and tomatoes. Start by heating oil in a large pan over high heat and cook the onions and peppers for 5 minutes. Stir in a curry paste, garlic , canned tomatoes and 150ml of boiling water. Boil then turn the heat down to low and add the turkey and potatoes and cook for another 3 minutes. Serve with rice.
