Blog: Five easy lunches to make when working from home.

Quinoa salad is a great to make at home and you can use any fresh ingredients including tomatoes, cucumber  avocado and spinach. Quinoa is gluten-free and high in protein so its one of a few plant foods that contain sufficient amounts of all nine essential amino acids. It also is a good source of fibre.

Vietnamese summer rolls are a fantastic lunch to make and surprising super simple. You can include any ingredients basically anything you can find in your fridge you can whip together to make these healthy wraps. A delicious combo is carrot, cucumber , red pepper and purple cabbage mixed with rice noddles wrapped with spring roll wrappers. 

Courgette salad can be served warm or cold depending on your mood. This has become a popular salad as its not only healthy but super delicious. Best served with cherry tomatoes , mozzarella and pine nuts. This summer squash also contains antioxidant and anti-inflammatory phytonutrients.

Buddha bowls are very versatile and quite filling. Always start with a grain for example rice then add greens like cooked spinach, roast vegetable like sweet potato lastly with some beans. Cook all ingredients separately then add together nicely in a bowl and serve with yoghurt, soy sauce or whatever you fancy.

Avocado and tuna salad is a mouth-watering combo for any day of the week. Add you greens and this salad will give you an energy boost. Avocados offer nearly 20 vitamins and minerals in every serving they are also low in sugar and contain fibre.
