Foodie Friday: This simple meal is a favourite, as it is full of healthy goodness but is so mouth wateringly tasty.
This is a Sicilian dish that consists of organic aubergine, tomato passata, garlic, chilli flakes, fresh organic basil and feta.
It is perfect with pasta (as long as you choose healthy with wholemeal) or also great with courgettie, then getting the extra goodness from those courgettes.
The heart-healthy benefits of aubergine don’t end with limiting cholesterol. Aubergine are high in bioflavonoids, which are known to control high blood pressure and relieve stress. Regular consumption of aubergine helps prevent blood clots thanks again to Vitamin K and bioflavonoids, which strengthen capillaries.
