Fi’s Foodie Friday : I can’t face another sarnie for lunch. Thanks to brilliant blood oranges this winter salad is a taste explosion and not a bit of bread in sight!
Orange Salad with dates, mint, and chilli *
This bright winter salad is a flavour explosion on a plate. Add some bulgar wheat, spelt or couscous if you fancy it for dinner instead of lunch.
5 oranges, such as a mix of navel and blood oranges 6 large medjool dates, quartered and pitted
100g feta, thinly sliced
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
A handful of mint springs.
1 small red chilli (ribs and seeds removed, if less heat is desired), thinly sliced into rings
Remove peel and pith from oranges with a sharp knife. Slice into thin rounds; remove seeds.
Arrange on a platter with dates, feta and pine nuts. Drizzle with oil; season with salt and pepper.
Sprinkle with mint and chilli and serve immediately.
