Fi’s Foodie Friday: Planning a wee party? Enjoy these Christmas bites with a glass of cold bubbles. Make extra, you will need them.
Remember this little recipe from September? I thought it would make a brilliant topping to these perfect party nibbles.
Serves approx 20 little bites*
1 ridge cucumber or regular cucumber
3/4 tbsp sea salt flakes
2 tbsp rice vinegar
3 tbsp caster sugar
2 tbsp chopped dill
Cut the ends off the cucumber and slice the rest very finely. Layer in a colander with the salt, place a plate on top and set over a bowl so that the juices can run out.
Leave for two hours. Rinse the cucumber and carefully pat dry.
Mix the cucumber with the rest of the ingredients and keep covered, in the fridge, until ready to serve.
Cut out little discs of soda bread. I use a scone cutter. Mix creme fraiche with a generous amount of grated fresh horseradish to taste. You can also use a spoonful of a good quality jar of horseradish. Dollop it onto the discs and add flaked hot smoked salmon, then the pickled cucumber. Finally a good grind of black pepper and a squeeze of lemon juice over the top and these are ready to serve.
